Hi, Kitchen Princess Bamboo! I want to ask you if this is something that already exists in Japan: lately I have been making something like okonomiyaki, but not a pancake, just eggs. I mix eggs, cabbage, salt, pepper, sometimes some sugar and dashi powder. This I cook into a round pancake shape to fit the rice bowl I will be using, and top it with okonomi sauce, kewpie mayo, aonori and chopped green onions. Then I slide the egg/cabbage pancake onto the top of hot cooked white rice. I like it better than regular okonomiyaki, which I find can sometimes be a bit heavy. I am going to guess that I am not the first to do this! (This dish evolved from my love of okonomiyaki plus my fondness for Korean street toast...and my love of short grain white rice!) It is also good topped instead with a sprinkle of white sugar and squiggle of ketchup!

Hi I tried to make okonomiyaki again. You may remember a few months ago I tried it and we didn't like it very much. This time I tried again and very carefully measured and followed your instructions and even use the timer to do the 3 minutes cooking times. We are vegetarians so we prefer to use Quorn gammon Style pieces which I chopped up and put in the cabbage mixture instead of the pork belly. It turned out so delicious we couldn't believe it. I think each time I make it will get lighter and better as I learn from experience. Yay now we know why people love okonomiyaki.

I made Osaka style okonimiyaki today with cabbage and unsmoked bacon (close as I could find to thin-sliced pork belly). We enjoyed it very much! Apparently, we prefer Osaka style. It was very plain, due to lack of access to certain ingredients: just flour, dashi, egg, cabbage, pork. Topped with Otafuku okonomi sauce and Kewpie mayo. (Today I couldn't even get green onions in the shop, let alone aonori or bonito flakes! :D ) We did find it rather stodgy, though, and probably won't make it again. Omurice is my favourite yoshoku that I've tried so far!

Hi, Carla! Thank you for sharing your story! I would llike to show respect to your passion about leaning Japanese culture as a Japanese. Thank you so much♡ In my house hold of 2 adults in forties and a teenager boy , the ratio of Washoku and Youshoku is half and half. Young generations prefer Youshoku, obviously. I would say it varies for the ages. In my parent's, they eat only Washoku. I will show you the portions per a meal in the next video. And someday, I'll do "what I eat a day"Lol. Thanks for watching!

I love Japanese food, language and culture. I am really enjoying trying the recipes. There are some things I have made for years, like soba, udon, and of course my favourite, donburi of all sorts of types. In the last few years, I have really loved making omurice. I'd be interested in knowing what a typical Japanese family would eat over the course of a week. How often would there be washoku as opposed to yoshoku, for example. How many meals would contain rice. That sort of thing.

I made Hiroshima style okonomiyaki last night. I ordered okonomi sauce and kewpie mayo online, and bought an okonomiyaki kit which contained aonori and pancake mix -- I wanted to get an idea of what it's 'meant' to taste like before I try homemade. I did not use the pork or any seafood, just cabbage, beansprouts and eggs. We didn't know what to make of it. It tasted like what it was, a pile of layers of different ingredients topped with a sweet sauce and extremely tangy mayo. When it comes to Japanese comfort food, I much prefer omuraisu and curry rice! :D (Now I wonder what I'm going to do with this giant bottle of Kewpie mayo! That thing cost me £5. ha ha) Maybe I will try Osaka style next time.

I have needed this recipe for twenty years or more! Back in the nineties, I worked for the Japanese Consulate in Houston. One of the gatherings I went to, at the apartment of one of the gals from Japan (I am pretty sure she was from Osaka), was basically one giant okonomiyaki party! I fell in love with them that day and have wished for one ever since. Even though I've been to many Japanese restaurants here in the States, nobody seems to sell them, unfortunately. So I've been missing these for about 24 years or so. I don't eat meat anymore but I still can't wait to try these again (I'll use the seafood version). Can I assume that the mayonnaise is a special Japanese mayonnaise? I've got multiple Asian markets near me so I should be able to hunt down the ingredients.

  40. Kitchen Princess Bamboo: Japanese Everyday Food

Kitchen Princess Bamboo: Japanese Everyday Food2 年 前

Thank you for sharing the good story with me! The mayo I am using is "KEWPIE" in half calories. ( regular is fine!) I'm pretty much sure you can find it in any Asian market. Try it and let me know how it turned out. In the case you can't find "Yamaimo", check another Okonomiyaki video⇃ jpreporter.net/v/%E3%83%93%E3%83%87%E3%82%AA-D9KadwuxC5w.html

Well, worth tring! But here are the other suggestions for you. 1. Make meringue and add to the batter at the end of the mixing. This might help rising. 2. Make the batter without yama imo. Pan-fry the batter thinner than I did in the video. This might help making the better texture. How about that!?
