Heck I’ve been cooking eggs like this for years! Don’t need to add water. Use a clean oil like avocado or olive, not butter as it burns to easily. Turn down heat and cover. Watch yolks to take out how cooked you want. Easy peasy!

works for omelettes too. I actually mix some water into the eggs, put them in a pan over low heat and cover right away. Open it up a couple minutes later and it's cooked on bottom and mostly on top. Add cheese, toppings to half, fold, take off heat and cover for a couple more minutes. Perfect omelette. If you browned the bottom, you're using too high of a heat.

My dad would use butter , more than you need really 😅. But as everything got heated up he'd spoon the hot butter over the egg yolk and it would do the same thing .

It's a fantastic trick to not breaking your yolks. Thank you Mrs. Kringle. But, Again I say, what do you need with oil in a non-stick pan? isn't it already non-stick? If it has something to do with the cooking process that would be good to know.

  49. Danny Sims

    Danny Sims10 ヶ月 前

Alternatively, you can put a little oil and butter in the pan, or just use clarified butter, and baste the eggs as you would a steak or pork chop. This will give you a perfectly fried egg with the lacy edges, especially if you’re using a cast iron or carbon steel pan. I’m not trying to disregard your method, as I use it as well when I want an egg that’s similar to a poached egg, though slightly firmer, in less time. Just sharing another method.

love that way,we in the uk use veg sunflower or rapeseed oil, back in the day the 80s 70s & 60s we used lard and beef dripping, buts its very unhealthy and heavy,so oil ! but say 3-4 tablespoons, then use the spatular to flick hot oil over the yolk, then when its done tilt the pan to let the egg have a few seconds to burn off as much fat as desiered

If you like your yolks running, basted eggs are much better than over easy. The yolk tends to cook too much if you flip the egg.

My grandma did this but she had two hot skillets. As soon as she cracked the eggs into the first skillet, she placed the second super hot skillet over the first like a lid, then lowered the heat on the bottom one. Same result.

Practice...a lot. Too small a pan and you crowd your eggs for a difficult flip. Don't shy away from the basics. If you can crack an can flip an egg & with some practice, do it without breaking your yolk.
